Dandelion Greens Pesto
Pestos are a plant based diet staple, as they pack a nutritive punch and can be used as a sauce, dip, or spread.
Ingredients:
- 2 cups dandelion greens, smooshed, chopped, and washed - 1/2 cup avocado oil - 1-3 cloves of garlic - 2-3 tablespoons of pine nuts - 1 tablespoon nutritional yeast or parmesan cheese - A squeeze of lemon juice or 1 teaspoon of balsamic vinegar
Directions:
Combine all ingredients in a blender or food processor, and mix into a smooth paste. Serve on top of your favorite pasta with chopped baby tomatoes or as a dip or sandwich topping.

I can't think of a more appropriate spring time food or herb than Dandelion. Dandelion is a bitter, which makes it a supreme food for improving digestion, liver and gallbladder function, and healthy restoration of inner fire.
